Testing notes
Vignot is a delicious passito obtained from grapes left on the vineyards until the end of October. The wine is exclusively stored in steal tanks to keep the aromas purity. The colour is golden yellow, it flows a little bit viscous in the glass (as the small cat that comes out of the top of the label) to give scents of honey, almond and saffron to nose and mouth. At the end it is possible to feel a tip of acidity, which turns to mint.

Vinification (Wine-making)
Metod: Vignot isn’t produced every year, it depends on the weather we have in autumn, because we leave the grapes on the vineyards until the end of October. To avoid the creation of unwanted mustiness and rottenness, we take off all the leaves to ventilate the grapes and the berries with problems. After the harvest, the grapes are immediately crushed and pressed and we obtain so a must very creamy and sweet, which ferments in a natural way in steel tank. It rests there for about one year.
