Red wine Violetta is produced from the grapes of an ancient piedmontese variety, of which only a few hectars remain. The nose has mainly vegetal and mineral scents, with nuanced fruity aromas. The tannin is incisive and the good sapidity makes it perfect with salumi and first courses.

Vinification (Wine-making)
Method: The harvest by hand takes place at the middle of September. The grapes are then crushed, so that during the fermentation of 4/5 days, the wine can take the colour through the skins. After that, the grapes are pressed and the must is put in a steel tank where the malo-lactic fermentation continues. At the end of this process, the wine is filtered and after some month of “rest”, it is ready to be bottled.
